Southwest Pasta – Spice Up Your Freezer Tonight

Southwest Pasta
Ingredients:
Olive oil/ Vegetable oil
1/4 Cup diced onion
1/4 Cup minced fresh mushrooms
2-3 boneless, skinless chicken breasts, cut up
3 Beef Hot Links/ Smoked Sausage with Hot peppers (optional)
1-16 oz jar Ragu Alfredo sauce
14.5 oz can of tomatoes with jalapeno peppers in tomato juice
1/2 clove garlic salt and pepper to taste
1 lb. Fettuccine or your favorite pasta
Directions:
Boil pasta according to package directions. At the same time: saute onion and mushrooms in oil.
When onions are clear and soft, add raw cut up chicken. Saute until cooked through.
Add Smoked Sausage, Alfredo sauce, tomatoes, garlic, salt, and pepper.
Allow to simmer on low for at least 5 minutes before serving over cooked pasta.
Feeds 6 people or stores great for leftovers!
This pasta gets even better as it sits in the refrigerator or freezer. The sauce soaks into the pasta and flavors combine to make yummy leftovers!
For young children or those sensitive to spicy foods this is easy to make a mild version. Just cook the onions, mushrooms, and chicken according to the directions above.
Then add the garlic, salt, pepper, and Alfredo sauce. After this simmers for a few minutes I take out a portion of the sauce for my little girl. Then add the tomatoes and spicy smoked sausage. Mix in the pasta to the two separate sauces. This is a favorite at our house both for my husband that loves the spice and my daughter that gets a mild Alfredo pasta!
