This page will share simple chicken recipes that utilize the different parts of a whole chicken.

Simple Chicken Recipes #1: Chicken Quesadillas

This first recipe will utilize the chicken breasts to create a favorite Mexican dish that is easy and flavorful.
What You Will Need
  • Two chicken breasts
  • 1 pack of tortillas
  • 1 pack of Taco seasoning
  • 1 cup of shredded cheese
  • Toppings of your choice (Personally, I like offering lettuce, tomatoes, and sour cream, etc.)
What To Do
  1. Boil and shred the chicken breasts
  2. Combine the taco seasoning with the now shredded chicken
  3. Place a tortilla on a heated pan and top with chicken and cheese
  4. Place another quesadilla on top and pan fry over medium heat.
  5. Put the cooked quesadilla on a serving platter and allow each person to top theirs with their own choice of toppings. Enjoy!


Simple Chicken Recipes #2: Blueberry Barbeque Chicken

This next recipe will utilize the thighs, legs, and the wings and is a great dish for any time of the year but especially during summer – the grilling season.
What You Will Need
  • Chicken thighs legs, and wings, cut from a whole chicken
  • Two cups of blueberries, frozen or fresh
  • 3 tablespoons of ketchup
  • 1 tablespoon of dark sugar
  • Two tablespoons of molasses
  • 1/8 a teastpoon of allspice
  • Salt and pepper to taste
What To Do
  1. In a bowl, mix together the blueberries, ketchup, brown sugar, molasses, and allspice.
  2. Pour into a skillet over medium heat and bring to a boil. Simmer for fifteen minutes, stirring occasionally until sauce thickens.
  3. Set the sauce aside. Season the chicken with salt and pepper and grill until cooked through, brushing on sauce throughout. Enjoy!
Tip: You may want to save some of the barbeque sauce to use at the dinner table. If you would like to do that, simply set some aside before using it as a baste. If you want it spicier, you can add tabasco sauce.


Simple Chicken Recipes #3: Chicken Giblet Broth

Now for the last of these leftover chicken recipes for dinner. Make sure you keep the bones, heart, gizzards, and all the other parts of the chicken not used above. You can actually these leftover bits and pieces to make your own delicious chicken broth.
What You Will Need
  • Six cups of water
  • Chicken bones and leftover bits
  • One small onion, chopped
  • One small carrot, sliced
  • Parsley to taste
  • Thyme to taste
  • One bay leaf
What To Do
Combine all of these ingredients in a big pan and bring to a boil over medium-high heat. Once the mixture is boiling, reduce the heat to medium and let it continue simmering for one hour. To see another recipe for making your own chicken broth, check out this page.
