Freeze Large Batches of Lentil Soup and Never Buy Canned Soup Again!

Lentil Soup Soups are easy to make in large batches and they freeze great. You can portion out the soup into smaller containers and they are ready to go whenever you need them.
Simply thaw out a portion of soup whenever you need it and reheat it and you can have a great, easy and cheap meal right at your fingertips.
One on my family’s favorite soups is lentil soup. It is perfect to make in large batches.
It takes a while to cook, but once you have it simmering the hard work is done, and all it needs is time. It is also a soup that tastes better the day after it is cooked so it lends itself to freezing.
The recipe is fairly simple.
1 lb dry lentils
1 medium onion, diced
1 or 2 stalks of celery, diced
˝ green pepper, diced
1 or 2 cloves of garlic diced
1 ham bone
1 tbl salt
1 tsp black pepper
2 bay leaves
10 cups water
Sautee onions, celery, green pepper, and garlic in skillet.
In a large soup pot combine all ingredients. Bring to a boil and allow to boil for 10-15 minutes. Lower heat to a simmer, and allow to simmer for at least 2 hours.
If desired let it cook for as long as you want. When finished remove ham bone (the meat should have fallen off), and bay leaves.
Allow to cool before storing in plastic containers.
Store in the freezer. With soups such as this in the freezer there will never be a need to buy a can of soup again.
