Easy Freezer Parmesan Chicken – A Simple Meal the Whole Family Loves

I make this easy Chicken Parmesan from a family pack of chicken breasts when they are on sale. Everyone in the family loves it and we cannot always sit down together and eat dinner. Sunday dinner has gone by the wayside because everyone is so busy that they use their Sundays to finish errands left undone during the week.
I make this and I package it in freezer bags, 2 breasts in each freezer bag. Make sure to get the double zip so the food always stays fresh and also "burp" all the air out of the bag!
Easy Freezer Parmesan Chicken
1 4/5 pound package of boneless chicken breasts
2 jars of inexpensive jar sauce ( we like green peppers and mushroom)
1/2 onion chopped
1/2 green pepper chopped
2 T EVOO( extra virgin olive oil)
1 T grated Parmesan cheese
1 lb package of provolone cheese sliced
3 eggs beaten
2 cups bread crumbs
Take a frying pan and add olive oil and warm gently and add onion and peppers and cook until you see them soften and get a little see through (the onions).
Put the both jars of sauce in the pan and mix well. Keep on low while getting chicken prepared.
Take a 9 x 13 pan and cover the bottom with 1/2 the sauce. Turn off the sauce.
Take the beaten egg and put in large enough bowl to swish around chicken. Put bread crumbs and Parmesan cheese in a low bowl and mix thoroughly. Swish chicken in egg mixture and then bread crumbs and place in pan on top of sauce.
Put the remaining sauce over the chicken. Top each chicken with a slice of Provolone cheese.
Bake at 350 for about 40 minutes.
Take out of oven and let cool.
Take a spatula and separate chicken breasts. Put 2 in each freezer bag and add some sauce to it. Burp out the air and freeze until needed.
When you need the chicken, Take out of freezer and put in refrigerator earlier in the day to thaw.
Just make some pasta and take the chicken out of the bag and put on a plate and microwave for 6 minutes throw on top of pasta and Voila!
An easy meal that you have prepared ahead of time and can do this 4 or 5 times out of one package of chicken. Enjoy!
