Easy Chicken Soup Recipes for Frugal Moms

Making easy chicken soup is...well, easy. If you know how to make homemade chicken broth yourself, it becomes that much easier and helps you to save even more money, which makes most moms out there happy.

Easy Chicken Soup Recipe #1 - Chicken Tortilla Soup

What You Need
  • 1 cup of onion, chopped
  • 3 cups of chicken broth
  • 1 14.5 ounce can of rotel with green peppers
  • 1 envelope of taco seasoning
  • 1 1/2 pounds of bone-out chicken breast, cubed
  • 2 tablespoons of cornstarch
  • 1/4 cup of cold water
  • 1/4 cup of shredded cheese
What To Do
In a large sauce pan, combine the onion, chicken broth, rotel, and taco seasoning. Over medium heat, bring the mixture to a boil. Mix in the chicken and reduce heat to low. Cover and let it simmer until the chicken is cooked through.

In a small bowl, mix together the water and cornstarch until smooth. Stir this into the soup to serve as a thickener. Turn the heat up to medium-high and bring the soup to a boil, stirring occasionally, for about one minute or until the soup thickens.

Top with the shredded cheese. Serve with tortilla chips. Enjoy!

Easy Chicken Soup Recipe #2 - Cream of Chicken Soup

What You Need
  • 2 tablespoons of butter
  • 6 tablespoons of flour
  • 3 cups of chicken broth
  • 1 cup of milk
  • 2 cups of cooked chicken, cut up
  • 1/2 teaspoon of thyme
What To Do
Melt the butter in a large pot. Add flour and stir the mixture until it begins to bubble. Add the chicken broth and the milk and bring to a boil. Season with salt and pepper to taste. Add the chicken and cook until the chicken is heated throughout. Enjoy!

Easy Chicken Soup Recipe #3 - Chicken and Barley Soup

What You Need
  • 1 tablespoon of olive oil
  • 4 diced carrots
  • 4 diced celery stalks
  • 1 diced onion
  • 2 boneless chicken breast. Diced
  • Salt and pepper to taste
  • 6 cups of chicken broth
  • 1 tablespoon of thyme
  • 1 cup of barley, uncooked
What To Do
In a large pot, heat the oil on medium-high heat. Add the celery, carrots, and onions. Cook for about 8 minutes, until vegetables are tender.

Season the chicken to taste with salt and pepper and add it to the pot, stirring for about two minutes. Add the broth and thyme and bring the soup to a boil. Stir in the barley. Cover with a lid and reduce the heat.

Simmer for about 10 to 12 minutes, until the barley is tender and the chicken is cooked through. Enjoy!

Easy Chicken Soup Recipe #4 - Oriental Chicken Soup

What You Need
  • 1 teaspoon of vegetable oil
  • 1/4 cup of onion, diced
  • 3/4 cup of cooked chickem, diced
  • 2 cups of veggie mix (I like broccoli and carrots)
  • 1 or 2 packages of Oriental flavored ramen noodles
  • 2 teaspoons of soy sauce
What To Do
In a large pan, heat the vegetable oil over medium-high heat. Sauté the onions for about one minute, stirring continuously. Add the chicken and cook until it is heated through on lower heat.

Remove from heat. Add water, vegetable, and the Oriental seasoning packet. Put back on heat and bring to a boil. Stir the uncooked noodles into the soup. You may want to break them up first.

Reduce heat and let simmer for about 3 minutes, until noodles are cooked through. Stir in the soy sauce. Enjoy!
