Chicken Breast Recipes – Frugal Family Dinners

As moms we are always trying to figure out the quickest and cheapest way to feed our families. The following recipes for cooking chicken breasts are perfect for the mom who is short on time and who wants to be as frugal as possible.

Chicken Breast Recipes #1: Chicken Tacos

This first recipe will yield 3 servings of tacos, with each person getting two. If you need more you can double the recipe and still only use one chicken breast!

To make this recipe you will need the following:
  • Half of a chicken breast
  • One tablespoon of olive oil
  • One Onions, sliced
  • One teaspoon of cumin
  • One can of black beans (15 oz), drained
  • Six taco shells
  • Half a cup of shredded cheese of your choice
  • Additional taco toppings (lettuce, olives, tomatoes, salsa, sour cream)- optional
  1. First, heat the oil in a large skillet.
  2. Slice up the chicken breast into fairly thin slices, then add the chicken and the onion to the skillet and toss until both ingredients are coated with oil.
  3. Cook for about ten minutes until the chicken is lightly browned
  4. Add the cumin and black beans and stir it before covering the pan and cooking until both beans and chicken are heated through.
  5. Finally, fill the taco shells with the mixture and add your choice of toppings.

Chicken Breast Recipes #2: Chicken Noodle Stir Fry

This next frugal recipe combines cooking chicken breasts with cooking ramen noodles – the ultimate frugal person’s staple. And it’s super easy and even healthy.

The ingredients list is fairly simple. All you need is:
  • One chicken breast, cut into small strips or cubes.
  • One pack of Ramen noodles, chicken flavored
  • One tablespoon of vegetable oil
  • One cup of broccoli
  • 1 large carrot, sliced
  • 1 Onion, sliced
  • Half a cup of teriyaki sauce
Throwing together this healthy, frugal meal is as easy as, well – throwing it together. First cook the noodles as indicated on the package, setting aside the seasoning packet. While the noodles are cooking, saute’ your chicken in oil for about 5 minutes or until cooked all the way through. Add the vegetables and cook until tender. Once the noodles are finished cooking, drain them and add them to the chicken/vegetable mix along with the seasoning packet and the teriyaki sauce. Stir well and enjoy!

This recipe is really great because you can play around with the vegetables that you add, creating an entirely new flavor each time you try it. Of course, you can do the same thing with shrimp, beef, and pork.

Chicken Breast Recipes #3: Paprika Grilled Chicken Breast

If you are looking for more recipes for chicken breasts, I have one more you can try out. One easy way of cooking chicken breasts is simply to grill them. This recipe will yield chicken that is tender, juicy, and very flavorful. Best of all, it is very easy to make and requires only a few ingredients:
  • Two whole chicken breasts- sliced 1/4 of an inch thick
  • Paprika
  • Garlic powder
  • Salt
  • Pepper
  • Olive Oil
Rinse the chicken breasts and dry them off. The drying process is important as it helps to trap in moisture during the cooking, preventing the chicken breast from drying out. Mix together paprika and garlic (to taste ) into a dry rub and rub it over the chicken breasts.

Sprinkle on salt and pepper (to taste) and then drizzle it with olive oil. Let it marinate for about thirty minutes. Heat some more olive oil in a pan and pan fry/grill the chicken until it is cooked all the way through.
